  • 3-4 chimneys good quality charcoal
  • 3-4 handfuls wood chips (any flavour you prefer)
  • 1 handful flaked sea salt
  • 1 handful ground black pepper
  • 2 tsp cayenne pepper
  • 3.5 kg flat beef brisket

Today's Tip : 1. One of the easy ways to prepare brisket is the crosshatch cut method. In this method the top layer of fat is cut across but the meat below remains untouched. This is done so that the smoke can make their way through to meat more easily. 2. Once you have applied the rub to the brisket, always massage it with your hands so that it penetrates as much as possible through the cuts that we have made.
