How To Pick The Perfect Steak!

Ray Lampe Dr. BBQ shows you how to pick the perfect steak for the Big Green Egg.

Today's Tip : Steaks that are more 2.5inches thick need to be seared on high heat first and then cooked by indirect heating method by placing it away for the heat with the lid covered. To make a nice crust on the outside bring it close to the heat for the last 5 minutes.  The Grill normally provide you with a guide, follow that to get the perfect steak every time.
