Today's Tip : When you are trying to cook thick cuts of meat or large steak, the low and slow method of indirect cooking with the lid on, is the best. Replace the single layer of coal from the Direct grilling method with 2 separate piles of coal with little space between the two. Place the meat on the direct heat for searing and then move it above the empty space for slow even cooking as the lid circulates the heat throughout.
