Bacon Covered Brisket Recipe!

OMG! this is just sinful! Sounds awesome!!

Texas is brisket country and it therefore it seem all to befitting to offer up our gluttonous rendition of BBQ brisket representing the Houston Texans as part of our NFL Recipe Series. The rub for the brisket sets the foundation of flavors, while the combination of covering the brisket with applewood smoked bacon, basting it with apple cider/bourbon sauce, and smoking it apple/mesquite woodchips provides a phenomenal smoky sweet and savory meat with just a hint of heat. As with any brisket the key is cooking the meat low and slow, so it is important set aside a huge portion of your day to tending to the bbq. Nonetheless I always find bbqing brisket a perfect way to relax on a warm day with a few friend and ice cold libations.

Today's Tip : To cook better, understand your Brisket better! -- " The best indicator to find the most tender brisket is to place it on the sides of your hand and allow it bend on both sides, the one that bends the most will give you the most tender brisket when done. For best results, try to get a brisket with at least a quarter inch of fat on top."

The Necessities:

  • 7-8 lb brisket
  • Brisket rub (below)
  • 1-2 lbs bacon (apple wood smoked)
  • Mopping sauce (below)
  • More than a lot of apple and mesquite woodchips

Brisket Rub:

  • 3 tbsp coriander powder
  • 2 tbsp salt
  • 2 tbsp ground pepper
  • 2 tbsp cinnamon
  • 2 tbsp cumin
  • 2 tbsp garlic powder
  • 1 tbsp mustard powder
  • 1 tbsp paprika (hot)

Mopping Sauce:

  • 4 cups apple cider vinegar
  • 1 cup bourbon
  • 1/2 brown sugar
  • 1 tbsp red pepper flakes
